For this recipe, you will need 260g of unsweetened liquid cream, 6 tablespoons of sugar-free chocolate syrup, 2 tablespoons of unsweetened cocoa, 1 sachet of gelatine and 240ml cold water. Put the water in a small saucepan and sprinkle the gelatin in it and let it stand like so for 1 minute. Place the pot on low heat and heat the water for 3 minutes, constantly stirring until the gelatin dissolves. Remove from the stove and let the mixture cool then put the sifted cocoa and chocolate syrup into the gelatin mixture and mix well until it incorporates. Whip the cream and incorporate it into the chocolate mixture then divide the mixture into 6 containers, cover them and put them in the refrigerator for at least 2 hours until the mousse hardens. You can decorate each mousse with 1-2 tablespoons of cream before serving and there you have a dessert perfect for diabetics.
